Named after a large hill in the region called Cerro El Dragon, the cooperative was founded in 2012 when Ricardo Valverde and a group of four other producers had had major issues due to the leaf rust epidemic in Central America. Together they pooled their resources and bought a coffee mill with which to process their own coffee and be able  to experiment with different processes such as natural and, in this case, honey. The honey process is renowned for producing coffees with a full body but extremely low acidity and a honey like sweetness. ‘Honey’ refers to the murcilage which is a sticky substance left on the beans after harvesting. The more murcilage or ‘honey’ left on the beans, the sweeter and deeper tasting the final product is. Honey process coffees are also well known for the high levels of fruit flavours they contain. In this example, sweet peach and juicy apricot flavours dominate. Suitable for all brewing methods, we have enjoyed this coffee particularly served in cafetiere and as an espresso.
