Paulo Ribeiro Maciel is a second generation coffee farmer who took over the Agua Santa farm in 1994. Agua Santa means 'Holy Water' in Portuguese and the farm has a natural 'terroir' (soil) which is ideally suited to the production of specialist coffee varietals. We buy this coffee direct from Paulo via his nephew Callum who lives in the UK which means that the workers at the farm recieve much higher wages than the national average. The resulting coffee is is delightfully sweet with notes of caramel and nougat balanced with a dark chocolate finish. We roast this coffee up to the second crack meaning that it is especially suited for after dinner drinking and use in espresso machines.
