Collected from thirty small scale producers in the Belén de Umbría region of the Risaralda department in central Colombia, high up in the western Andes. The coffee cherries are carefully wet processed by the farmers before being taken to the Trilladora Santa Teresita, one of the many dry mills in the area where the beans are milled and graded in preparation for export. This particular example is graded as a Screen 19+, meaning that it is one of the largest beans available. Like other coffees from central Colombia, it has a fruity, almost herbal taste to it with a spicy aroma and a full body. Best served black to accentuate the fruit flavours in full, it works particularly well as a cafetiere or filter coffee but is also suitable for aeropress and espresso.
